Butcher advice re sausages
Question
Hi Rachel,
I’m just enquiring as to sausages in particular we are having our own meat done up at a butcher and wondering what I should ask for in our sausages or should I say what Not in the sausages !
and also is there any concern with how they corn silverside.
As we are going to have a freezer full I’d like to get it right so if you could help I’d be ever so grateful

Hi Maria,
Yes its wise to ask as most butchers still add in "goo", my butcher binds the whoo hoo sausages with organic flour, natural herbs, tomatoes, s&p, so it can be done! Sadly most silverside also has nitrates added, this is the "modern" easier way. It can be done traditionally by using celery, as this contains natural occurring nitrates. So best to check with your butcher.
